Whether they are traditional mooncakes or snowskin mooncakes, they are one of the best fillings! It is hygienic and healthy to make it yourself without any additives. The amount of sugar according to the recipe is just right. If you like it sweeter, you can increase the amount appropriately, otherwise reduce it!

Weigh 250 grams of red beans and soak them in water overnight. Rinse them well and put them into a pressure cooker with an appropriate amount of water to cook into red bean paste

Place a large sieve on a large bowl and start sifting (a step that tests your patience, just for fineness)

Add 50 grams of corn oil, sifted red bean puree, and 150 grams of white sugar to a non-stick pan and stir-fry with a rubber spatula

Start using medium heat, remember to stir fry constantly to prevent the bottom from becoming sticky. Turn to medium to low heat and continue frying

Stir-fry until the bean paste does not stick to the spatula (not too dry, because it will be drier after cooling than when hot)
