My husband's favorite, but I don't like it very much. I always feel overwhelmed when eating braised noodles. 😄

Wash the meat and vegetables.

Cut the tomatoes into cubes, dice the pork, beans, peppers, and potatoes, and shred the carrots and cucumbers. Beat the eggs. (Potatoes must be soaked in water, otherwise they will change color)

The soybean oil I used was because the original heated soybean oil was used up, so I put a lot of oil in the pot this time. When hot, add onion, ginger and star anise. When the onion and ginger change color, take them out together with the star anise.

I fried the diced meat by the way.

The diced pork is out of the pot. (Tell me about this diced pork. I marinated it with salt, chicken essence, starch, and oil)

Add a little oil and fry the eggs until cooked.

When I make tomato marinade, I add the tomatoes directly after the eggs are cooked, and stir-fry over high heat. Add salt and chicken essence and take out.

Below are the beans. Add base oil and pour the diced meat into the pot.

Add diced beans, a small amount of vinegar, and an appropriate amount of light soy sauce. Add salt and chicken essence to taste.

Take it out of the pot (I added some water to the beans to avoid them being cooked. It feels like a stew)

Add oyster sauce and bean paste. Add chicken essence and take out. (I didn’t add salt to this, the saltiness of the bean paste and oyster sauce is enough)
