Wash the ribs.

Wash with running water, wash off the floating foam, and drain the water.

Peel the small pumpkin and cut into cubes. (The small Japanese pumpkins I grew at home were not old enough because the leaves were all yellow, so I had to pick them.)

Prepare ginger and garlic.

Heat the oil in a pan and fry the sugar. (Fry until the sugar melts and turns brown, with many bubbles forming.)

Add the pork ribs and stir-fry quickly to coat with sugar color.

Add ginger and garlic and saute until fragrant.

Pour in cooking wine and stir-fry.

Pour in light soy sauce and dark soy sauce and stir well.

Pour in hot water and salt, bring to a boil over high heat, then reduce to low heat and simmer for 30 minutes.

Add pumpkin and cook over medium heat for 15 minutes.

Reduce the juice over high heat.
