  1. Prepare the required ingredients first.

  2. Peel the shells of the shrimps, then open the backs and devein the shrimps, then cut them into small pieces of any size.

  3. The tofu is made from this very tender Japanese tofu. Remove the outer packaging and cut into thin slices.

  5. After the water in the pot boils, put the shrimp pieces in and blanch them to remove the smell. You can pour a little cooking wine. Do not blanch them for too long. When the shrimps change color, you can take them out and set aside.

  6. Put oil in the pot, and when the oil is hot, sauté the chopped green onions until fragrant.

  7. Add a little water and bring to a boil. Add the Japanese tofu. Note that the Japanese tofu is too tender and will break easily, so don't use a shovel to stir-fry. Just pick up the pot and shake it evenly.
