Passion fruit sponge cake
Overview
I'm super obsessed with passion fruit lately, and my mom also likes it. The baby came back from kindergarten and said he wanted to eat cake, so he simply ordered a passion fruit sponge cake. It combined the passion fruit that the mother liked and the cake that the baby liked. They both liked it very much. I think the seeds of passion fruit are okay, but my baby has obsessive-compulsive disorder, and the seeds must be removed when drinking or making cakes. Anyway, he can’t see it, so I crushed it in a food processor and filtered it. If you feel it doesn’t matter, you can use it directly.

Prepare ingredients
-
Crush the passion fruit in advance with a food processor and filter, take 35 grams
-
Separate egg whites and yolks. Add the egg whites to the powdered sugar in three batches and beat until dry peaks form. Beat the egg whites at high speed until there are thick bubbles in the egg whites, add 1/3 of the fine sugar and continue beating. When the meringue gradually thickens and lines appear, add 1/3 of the fine sugar for the second time and continue beating. When the meringue texture becomes more obvious, add the remaining sugar and beat at low speed until the top becomes sticky and drooping.
-
Add the egg yolk and mix at low speed until the egg yolk and egg white are evenly mixed and firm texture appears
-
Slowly pour the corn oil on the surface of the egg mixture and stir evenly with a manual egg beater
-
Sift the low-gluten flour into the egg batter
-
Mix well with a hand mixer
-
Pour the previously filtered passion fruit juice into the egg batter and stir evenly
-
The mixed batter should be fine and smooth. Preheat the oven to 160 degrees
-
Place the paper cups in the cake mold in advance
-
Pour the prepared batter into a piping bag, cut a small opening at the front of the piping bag, and pour evenly into the paper cup, about 9 minutes full
-
Put it in the preheated oven and bake it at 160 degrees for about 28 minutes. When done, take it out and let it cool. Whisk the light cream and powdered sugar with an electric whisk until a fixed pattern appears, then put it into a decorating bag and squeeze out patterns on the cake
