Crispy Shrimp Pizza
Overview
Today, my sister came to my house as a guest, and specially prepared a crispy bottom shrimp pizza for everyone to try. This time, it is baked twice. First, put the pizza crust in the oven to bake for a few minutes in advance, and then add the fillings and cheese. This way, the pizza crust will become crispy and very delicious. Friends who like to eat crispy crust pizza may wish to try it at home!

Ingredients
Steps
-
Prepare flour, add salt and sugar and mix well;
-
Dissolve the yeast in warm water, but the water temperature should not exceed 35 degrees;
-
Pour the water into the flour in batches and spread it with chopsticks. The flour will absorb the water and form a floc;
-
Knead the dough until the surface is smooth and soft.
-
Then add butter and knead until it expands (it may be difficult to knead at the beginning, it doesn’t matter, until the butter is completely absorbed in the end.)
-
After kneading the dough until it is smooth, place it in a basin and cover it with plastic wrap for the first fermentation. The temperature is relatively low in winter, so I put it next to the heater and fermented it for about 2 hours.
-
Use the fermentation time of the dough to prepare the filling. Cut the mozzarella cheese into thin strips. Peel the shrimps and remove the shrimp lines. After washing, add a little cooking wine, salt and black pepper, and marinate for a while.
-
When the dough has fermented to 1.5--2 times in size, dip your fingers in dry flour and insert them into the dough. If the holes do not shrink back immediately, it is a basic fermented dough.
-
After the mixed dough has fermented until doubled in size, deflate the dough and roll it into a smooth dough. Sprinkle with dry flour and roll it into a round cake with a rolling pin.
-
Grease a pizza pan with a thin layer of olive oil or butter and place the dough into the pizza pan. At this time, secondary fermentation can be carried out. You can put it in the oven with a bowl of hot water underneath, the temperature is about 38 degrees, and let it stand for 30 minutes. After the proofing is completed, use a fork to poke some holes in the cake base to prevent the bottom of the cake from swelling when heated, then place it in a preheated oven at 160°C and bake on the middle shelf for about 6 to 10 minutes;
-
After taking out the baked pizza, spread a layer of tomato sauce or pizza sauce on it and spread it evenly.
-
Spread a layer of mozzarella cheese;
-
Then lay out the sausage slices;
-
Sprinkle with corn kernels and peas;
-
Place shrimps on top;
-
Finally sprinkle with a layer of mozzarella cheese.
-
Put the cake base into a preheated oven of 220 degrees, 200 degrees, upper and lower heat, middle layer, for 15 minutes. Adjust the temperature according to your own oven. Bake for 15 minutes, take it out, add the remaining mozzarella cheese and bake for 6-7 minutes until melted.

Take out the pizza, cut into pieces and enjoy~
