Soak a piece of chicken breast in water for a while.

Clean and remove fascia and fat.

Chop into fine minced meat, the finer the better.

Clean three green onions.

Cut into fine pieces, as small as possible.

Chop a small piece of ginger into fine pieces.

Cut a millet pepper into circles.

Cut a green chili into circles.

Peel and clean a cucumber.

Cut into sections about 3cm thick.

Use a small spoon to scoop out the pulp and meat inside.

Put the chicken breast puree, chopped green onion and minced ginger into a basin, add an egg and 2 tablespoons of cornstarch.

Then add a spoonful of light soy sauce, an appropriate amount of salt, a spoonful of cooking wine, a spoonful of sesame oil, a little allspice, pepper, and chicken essence and stir evenly.

Stuff the meat filling into the cucumbers.
