Chocolate Xpress Cookie Bars
Overview
Some time ago, I saw the recipe for this chocolate cookie bar on Junzhi’s blog, and I thought it was very good! A small and delicious snack that tastes as good as the Glico biscuit sticks bought from outside. The crunchiness of the biscuit sticks, the richness of the chocolate, and the sweet aroma of the nuts touch your taste buds and taste really good. Take some with you to work, take one out at work, put it into your mouth and bite it gently, and quietly enjoy the comfort of taking a break from your busy life; or sit at home and enjoy your favorite TV programs with your family while watching them; or eat while walking. Eat however you like, as you like! Feel free to add your favorite nuts, or dip it in sweeter white chocolate, whatever you want!

Place the almond slices in the oven and bake at 170 degrees for about 2 minutes until the surface turns yellow. Take it out and cool it, then grind it into small pieces and set aside.

Sift together low-gluten flour, whole milk powder, baking powder, baking soda, and powdered sugar and set aside.

Pour in the beaten eggs, melted butter, and vanilla extract.

Knead all ingredients into dough with your hands until smooth.

Place the dough on a cutting board and roll it out into a thin sheet.

Fold the dough in half twice, then roll it out flat, repeat this four times. Finally, roll the dough into a rectangular sheet about 5mm thick. Then use a knife to cut off the corners to make it a regular rectangle.

Using a ruler as a guide, use a knife to cut the dough into thin strips about 5mm wide (a wheel cutter is best).

Place the cut thin noodles on a baking sheet lined with oil paper, place in the preheated oven, heat up and down to 170 degrees, and bake for 10-12 minutes, until the surface is slightly brown. Take out and let the cookies cool.

The chocolate melts into a liquid state. Dip the cookie stick in the chocolate so that most of it is coated in chocolate.

Finally, roll in the chopped almond slices. Dip in slivered almonds, place on a baking sheet, and let sit until the chocolate is completely solidified before serving.
