Wash and cut the octopus, and cut the silly ginger into cubes.

Some scallions.

Heat the oil in the pan, pour the octopus, and stir-fry the ginger and ginger over high heat evenly.

Stir-fry until slightly red. Add salt, cooking wine, soy sauce, and sugar and stir-fry evenly to incorporate the flavour. Add scallions and stir-fry until raw.
