Quickly blanch the purchased bean sprouts in water so that they can be cooked quickly, making it easy for novices to grasp the maturity level. (If you want to eat casually, just put it in the pot. If you want to be more particular, just cut off the head and tail)

Cut the ham into shreds and cool the blanched bean sprouts with cold water. The bean sprouts will become translucent and look great. (Since I can’t buy cured ham, I can only use ham sausage instead)

Prepare a wok. When the oil is hot, add minced garlic and ginger to the pan. Add shredded ham and fry it in oil, then add bean sprouts and stir-fry over high heat. Pay attention to the time in this step and do not over-fry the bean sprouts. If the bean sprouts are too watery, they will lose their crisp texture. After stir-frying evenly, add light soy sauce, a drop or two of vinegar and salt to taste. (At this time, the imperfection of the ham sausage is reflected, it is easy to break. Moreover, you must use light soy sauce, as dark soy sauce will turn black.)

Pour sesame oil over the pan and serve on a plate. If possible, you can add two leeks and cut them into small pieces, so that the color and taste will be better.
