Wash the thick middle part of the grass carp, cut the grass carp meat into flat pieces and place it on a plate, then use a knife to make a few slits on the back of the fish and put the shredded ginger into it (the advantage is that the fish cooks quickly and is delicious), add cooking wine, salt (a little bit evenly sprinkled on the fish is enough), minced garlic, sprinkle on the fish and marinate for 10 minutes.

After marinating, sprinkle MSG on the fish, apply soy fish ginger vinegar, and finally apply Laoganma sauce (how much depends on personal taste, I personally like to put more because I like spicy food.) Finally, add a little Sichuan peppercorns to add flavor.

Wrap it in plastic wrap and steam it in the microwave for 8-10 minutes. Take it out and sprinkle some washed coriander leaves to look good and add flavor.
