Spicy Chicken Gizzards
Overview
Many people like to eat hot pot during the Chinese New Year, and hot pot base is a must-have for almost every household. Today I will use the hot pot base to make spicy chicken gizzards. The spicy aroma can completely remove the odor of the chicken gizzards. It tastes spicy and crispy and is delicious hot or cold.

Remove the inner skin from fresh chicken gizzards and rinse them repeatedly.

Pour cold water into the pot, add rice wine to remove the odor, bring to a boil and cook for 1-2 minutes.

Blanch the chicken gizzards and then wash them with hot water to remove surface impurities.

Put about 15 ml of red oil in the pot, add it to the wok, and stir-fry the onion and ginger.

Then add chicken gizzards and stir-fry for about 1 minute.

Pour in the hot pot base ingredients and stir-fry for about a minute. I used thick liquid spicy hot pot base, but lumpy ones are also fine.

Add boiling water, do not cover the chicken gizzards, only about 2/3 of the way.

Add a little sugar to taste, then simmer for 15 minutes.

Finally, the juice can be collected over high heat.
