Pan-fried fish cake
Overview
Na Geyu is also called the mud dog stick, and its scientific name is the multi-toothed snake mullet. Fish cakes can be fried for better taste.

Remove the scales and belly of the fish and wash it. Chop green onions and coriander.

Remove the fish meat. (The removed head and bones can be added with sauerkraut to make another soup).

Add the fat pork and mince it into puree, put it in a basin and set aside.

Add salt, fish sauce, chicken essence, pepper, flour and cornstarch, stir in the same direction while adding the onion and ginger water, stir until strong.

Add chopped green onion and coriander and mix well.

Form the isinglass into small rounds and place in the pan.

Fry until both sides are golden brown.

When eating, you can dip it in fish sauce or orange oil according to your taste.
