Steps
-
Prepare the ingredients and wash them; shred the ginger, dice the green onions, flatten the garlic and mince it.
-
First, use scissors to cut off some shrimp tentacles and the thorns above the shrimp head that can hurt your hands. Open the sides of the tiger shrimp and remove the shrimp line. (The shell of this shrimp is a bit hard, so be careful not to cut it on your hands when cutting! You can use a piece of cloth to hold the shrimp down to prevent it from slipping. Bend the shrimp to make it easier to cut. Use a soft yet firm knife to cut deeply back and forth without cutting off.)
-
Cut them all as shown in the picture, pour in cooking wine and marinate.
-
Now start making raw and cooked garlic: add cold oil to the pot, pour half of the minced garlic and fry until golden brown; leave half of the raw garlic, add 2g of salt and mix well.
-
Stir-fry the minced garlic until golden brown, add 2g of salt and a little chopped green onion and sauté slightly until fragrant.
-
Pour the cooked garlic that has been fried until golden brown and the oil in the pot into the bowl of raw garlic, add 1 tablespoon of soy sauce and 3g of sugar and mix well.
-
Fill each tiger shrimp with 20g of raw and cooked garlic, and finally sprinkle a little shredded ginger, 2g of sugar and corn oil on the surface. (If you don’t like the taste of ginger, you can omit it).
-
When the water boils, steam over high heat for 5 to 8 minutes. The time required for steaming depends on the size of the shrimp.
-
Thump thump thump, Mum-da appears! I steamed it for 7 minutes and sprinkled some chopped green onion (you can pour a little hot oil on the surface or not)! It’s all red!

You're done! Click click click, feed the camera first! Haha!
