Two-color towel cake roll
Overview
After the bottom layer of oilcloth is removed, the surface of the cake roll has a plush texture, like a towel, so it is called a towel cake roll. This formula contains a lot of water, making the cake roll soft and not easy to crack. Bake on a 28*28 baking pan lined with oil cloth.

Separate the egg yolk and protein, and the basin containing the egg white should be free of water and oil.

Make the egg yolk paste first. Take another basin and stir the milk, sugar and oil evenly so that no oil splash is visible on the surface.

Sift in the low-gluten flour and mix slightly until no dry powder is visible.

Add the egg yolks and mix in a Z shape. Sift the flour first and then add the egg yolks. You will find that the batter is very delicate and not easy to clump. Cover the mixed egg yolk paste with plastic wrap and let it rest for later use.

Heat the matcha powder in water and mix well. Set aside.

Beat the egg whites, add a few drops of lemon juice, beat until rough and add fine sugar.

Add the fine sugar to the egg whites in 3 batches and beat until you lift the whisk head and the egg whites are in the state of short and small hooks. Because the operation time of the two-color towel roll is longer than that of the original cake roll, the egg whites are slightly harder to beat and are not easy to defoam.

Add 1/3 of the egg whites to the egg yolk batter and mix evenly.

Pour back into the remaining egg whites and mix evenly.

Divide the mixed cake batter into two equal portions.

Make one part of the matcha batter, scoop out two tablespoons of cake batter and mix the matcha that you started stirring evenly.

Pour back into the cake batter and mix evenly.

Put the two cake batters into piping bags.

First pipe out the cake batter on the diagonal line in the center on the baking sheet, and then pipe the cake batter on the empty line.

After squeezing the matcha, squeeze the original cake batter into the empty space. Shake lightly to remove small air bubbles in the cake batter, then bake in the middle rack of a preheated 190 oven for 25 minutes.

After the cake roll is baked, lightly smash it twice, take it out and place it upside down on the baking mesh, tear off the oil cloth, take a clean piece of oil paper, place it on the cake roll, turn the cake roll over, right side up, and let it air until warm.
