Well, this is also an excellent dish. Meat and carrots are a classic combination. Be it beef, mutton or pork, everything goes well. It's just that I don't like meat and vegetables simply stir-fried together. Stir-fried meat with carrots, stir-fried meat with celery, stir-fried meat with cauliflower, stir-fried meat with beans, etc. All the dishes taste the same, which is too confusing. Hehe. It's the same carrots and meat, but let's change the method to not only catch the eyeballs, but also the stomach. Stir-fry the minced meat over low heat until crispy, and mix it with the fried shredded carrots. You will feel comfortable no matter how you eat it! Chop the beef and marinate with onions, ginger and seasonings. The seasonings I use include light soy sauce, dark soy sauce, cooking wine, salt and sugar. Because there is not much meat, I also use a little bit of various seasonings. Chop or grate the carrots.

Pour oil into the wok and fry the minced meat.

Turn to low heat and stir-fry slowly until the minced meat is crispy and fragrant. The low heat is very important in this step.

Remove the minced meat from the pot.

Use base oil to fry soft carrot shreds.

Season the shredded carrots with salt and light soy sauce, then return part of the minced meat to the pot and mix evenly. After taking it out of the pot, pour the remaining minced meat over the vegetables, top with the shallots and serve.
