Hot and sour twice-cooked fish
Overview
The waiter ate twice-cooked fish, which was sour and spicy. My husband and I both liked it. My husband said we should go home and try it ourselves, so we came up with this dish. It tasted pretty good and we ate it all.

First, prepare all the ingredients

Mix the fish with onion, ginger, cooking wine and salt and marinate for a while.

Mince the ginger and garlic, cut the pepper into rings (cut into shreds, too), put some cornstarch, dark soy sauce, and water in a bowl to thicken it and set aside.

Then pat the fish fillets with cornstarch

Put oil in the pan, heat and fry the fish fillets slowly until yellow

Leave a little oil in the pot, add ginger, minced garlic, and chili pepper rings and stir-fry until fragrant. Add some tomato paste according to your favorite acidity, and pour in the blended gravy.

Pour in the fried fish pieces and stir until every piece of fish is coated with the sour and spicy sauce and serve.

When the pot is ready, sprinkle some chopped green onions (my family likes to eat onions, so I have more chopped green onions)
