Borscht
Overview
Borscht is a thick vegetable soup that originated in Russia. It usually uses tomatoes and tomato paste as the main seasonings, mixed with various vegetables, chunks of beef, and a piece of staple bread. It is rich in nutrients and has a mellow taste.

Ingredients: beef brisket, tomatoes, green onions, cabbage, potatoes.

Wash the beef brisket, bring cold water to a boil and cook for about 2 minutes.

Rinse the cooked beef brisket in warm water that is not hot to your hands.

Bring water to a boil in a pot, add beef brisket, add bay leaves and 2 cloves of garlic and cook over low heat for about 1.5 hours until the brisket is tender.

Cut the tomatoes into cross-sections, blanch them in boiling water and peel them.

Chop the peeled tomatoes.

Clean the cabbage and tear it into small pieces by hand.

Chop the green onions, peel the potatoes and cut into cubes.

Heat the wok and add butter.

Add chopped green onions and stir-fry until fragrant.

Add chopped tomatoes and stir-fry evenly.

Add 1 tablespoon of sugar, cover and simmer over high heat for a while until the soup thickens.

Remove the bay leaves and garlic from the cooked beef brisket pot and add the potatoes.

Add the fried tomato paste, salt and tomato paste, stir well and continue cooking for about 10 minutes.

Heat another pan and add butter.

Add appropriate amount of flour and stir-fry repeatedly until slightly brown.

Add to the skillet while still hot, stir well and continue cooking for a few minutes.

Finally add cabbage and cook for 1 minute, then add chicken essence and pepper.

Scoop into 1 bowl and enjoy with whole wheat bread.
