Nest egg-free beef rice (tomato sauce version)--with tomato peeling method
Overview
I had it in a tea restaurant in Macau before and thought it tasted very good, so I went home and made it myself based on memory. The meat sauce above is based on the flavor of tomato sauce pasta. So the basic meat sauce can also be poured over pasta and tastes great. So the second half of this recipe is basically how to make the meat sauce for spaghetti with tomato sauce. Wash the tomatoes and make a cross cut on the top

Put it into boiling water and use a spoon to continuously pour hot water on the top. You will find that the tomatoes begin to peel in about 3 minutes. Of course, the specific time will vary according to the size of the tomatoes.

The skin then peels off easily. After peeling them all, cut them into small cubes.

Add salt, a little chicken powder and black pepper to the minced pork (or ground beef) and marinate it well. Chop the onions and mushrooms finely. Press the garlic into minced garlic (I put about 8-10 garlic cloves)

Stir-fry until the minced meat changes color, then add diced tomatoes, continue to stir-fry, add a little sugar and salt, stir-fry evenly, cover the pot and simmer for 1-2 minutes until the tomatoes release juice.

After the tomatoes have juiced out, add about 3 tablespoons of tomato sauce, stir evenly, then add 1-1.5 small bowls of water, bring to a boil over high heat, then reduce to low heat and simmer.

When the soup is thickened, add appropriate amount of cheese powder or cheese cubes. Then turn on medium heat and stir to reduce the juice.

When the sauce thickens, you can take it out of the pan and set aside (there is a color difference in this picture, please ignore it)

The sauce that comes out of the pot can be poured directly on the pasta. You can add some cracked black pepper, cheese powder, and chopped parsley according to your personal taste.

After stir-fry until soft, add the freshly cooked meat sauce. Stir evenly, add a little bit of water, bring to a boil over high heat, and then it's ready to be cooked.

Spread the freshly cooked rice (boil the rice in hot water, the cooked rice will be more elastic) on the plate. If you see a shadow of the raw egg, you can crack an egg in the middle of the rice, and then pour the sauce.
