[My canteen dish] Stir-fried pickled cabbage and crispy lotus root slices
Overview
Sauerkraut is called pickles in our area, and we usually add some sugar when we eat it. Later, when I went to college and was in the cafeteria, I found that people there also like sauerkraut, but they call sauerkraut pickles. Their sauerkraut is spicy, sour and delicious, and very enjoyable. It can be found in sauerkraut buns, grilled bait cubes, stir-fried sauerkraut and other dishes. The one that I will never forget the most is the stir-fried sauerkraut and crispy lotus root slices. The spicy and sour sauerkraut, paired with the crispy, sweet and juicy lotus root slices, makes your mouth water just thinking about it~

Prepare the ingredients, wash the lotus root and cut into thin slices. Wash the sauerkraut and cut into thin strips. Wash the dried chilies and set aside.

Put some water in the pot, boil it, add lotus root slices, blanch them, remove and drain the water and set aside.

Pour oil into the pot, add garlic and dried chili peppers, sauté the pot until fragrant, add lotus root slices and stir-fry for a while.
