Pineapple Sweet and Sour Pork

It’s the season to eat pineapples again. It is said that the supply of pineapples is sufficient this year and the price is right. I wish I could eat one every day. This pineapple sweet and sour pork dish is very popular among friends, with sweet and sour tomato sauce, sweet pineapple, and crispy fried meat. Soak the pineapple in salt water and cut it into small pieces. I think it will be similar to mahjong tiles. Cut the lean pork into pieces, the same size as a pineapple, marinate with cooking wine and black pepper in advance.

Then use raw starch and eggs to mix the meat pieces evenly. It doesn't need to be too wet, it's just right.

Heat the oil in a wok over high heat until it smokes, add the meat pieces, and quickly use long chopsticks to break up the meat pieces.

Fry until golden brown. After setting the starch paste outside the meat pieces over high heat, turn the oil pan to low heat and fry for three minutes.

Prepare seasoning. Mix half a bowl of tomato sauce + 1 spoon of sugar + 1 spoon of light soy sauce + a little water, and stir evenly.

Put the base oil in the oil pan again. A little oil is enough to moisten the pan. When the oil is slightly hot, add the seasonings and simmer for a while.
