Ingredients
Steps
-
Half a fresh chicken, washed and dried.
-
Put it into a pot of cold water and blanch it.
-
Wash the shallots and ginger, and add about 2 tablespoons of Huadiao wine.
-
Take out half the chicken that has been soaked in water.
-
Pour an appropriate amount of water into the rice cooker, add the boiled chicken, ginger cubes, shallots and Huadiao wine until the water covers the chicken, then set the "steam" function for 15 minutes.
-
While the chicken is cooking, prepare the onion and ginger seasoning. Chop two green onions and grind the ginger into minced ginger using a ginger grinder (the amount depends on personal taste and the size of the chicken).
-
Put the chopped green onion and minced ginger into a bowl, add a small spoonful of salt and 1 spoonful of light soy sauce.
-
Pour appropriate amount of peanut oil into the wok and heat it up.
-
Pour hot oil into a bowl and pour in minced ginger and green onion.
-
After 15 minutes, steam the cooked chicken pieces, simmer them in the rice cooker for another 5 minutes, take them out and let them cool, then put on disposable gloves and tear the chicken pieces out, leaving the skeleton intact.
-
Pour the shredded chicken with scallion oil and serve on the plate.
