Cold Shredded Chicken
Overview
I bought a free-range chicken and stewed a pot of chicken soup. I removed the stewed chicken breast, shredded it into shreds by hand, and made a cold shredded chicken. I feel that it is less greasy and more refreshing.

Clean the chicken after slaughtering

Prepare the ingredients for cooking the meat: 1 star anise, 2 slices of galangal, 4 slices of angelica root, 5 grams of angelica root, 2 amomum villosum, 4 cloves, 2 bay leaves, and 15 grams of ginger.

After the chicken is slaughtered, clean it, add the meat ingredients, and cook on low heat for 1 hour

Cooked chicken, cut off the breast part

Remove the meat and shred it into shreds.

Shred the red pepper, chop the coriander and add to the shredded chicken

Tear into shreds by hand.

Mash the garlic into puree, add chili oil, salt and sesame oil and mix well
