Rinse the fish fillets with water, add cooking wine, green onion, ginger, and a little salt and marinate for 15 minutes.

The fish fillets are covered with cornstarch.

Heat 60% of the oil in the pot, add the fish fillets dipped in cornstarch, and fry over medium-low heat until cooked through.

Fried fish fillets.

Put white vinegar, sugar and tomato paste in the pot and cook until thickened. (ratio 1:1:2)

Add water starch and stir evenly. (You can use the remaining cornstarch from dipping the fish fillets)
