Stir-fried beef with green pepper

Cut the beef tenderloin into slices first, cutting off the grain of the beef.

Then cut into strips.

Cut the ginger into shreds and set aside.

Wash the green peppers and remove the heads.

Cut the green pepper into shreds, add salt to taste and set aside.

Add a little shredded ginger, salt and sesame oil to the shredded beef and mix well.

Then add the sweet potato flour and mix well, wrapping the shredded beef to lock in the moisture.

After the oil is hot, add the shredded beef and stir-fry for 30 seconds. This will allow the sweet potato starch to fully coat the shredded beef and set its shape.

After the shredded beef is stir-fried, add shredded ginger and sauté until fragrant.

Add green pepper shreds and stir-fry.

Wait until the green pepper shreds change color.

Add light soy sauce and appropriate amount of salt to taste.
