Honey Cookies
Overview
Honey biscuits, adapted from Teacher Meng’s molasses biscuits. We don’t have molasses, but we have plenty of honey. I like this lazy body shaping method more and more. When making sugar, you usually stretch the dough into long strips, knead it neatly and throw it into the refrigerator. After half an hour to an hour, you take it out and slice it. It is fast and even. It is much easier than rolling into balls one by one and flattening them. Moreover, it is best to roll into round bars, because square bars have to be made horizontally and vertically, which is a little more troublesome.

Soften butter and add caster sugar

Beat evenly with a whisk

Add honey and mix well

Add whole eggs in portions and beat

Become a uniform creamy paste

Sift the cake flour and baking soda into the butter paste

Mix well in irregular directions

Shape into a long strip with a diameter of about 2-2.5 cm, wrap it in plastic wrap and put it in the refrigerator for about 1 hour

Take it out and cut it into slices about 0.6 cm thick

Place in the middle rack of the oven, heat up and down to 165 degrees, and bake for 15-20 minutes
