Clean the South American yellow croaker, rub it inside and outside with salt and 1 tablespoon of cooking wine, and marinate for 30 minutes.

Cut green onions into sections.

Put oyster sauce, light soy sauce, dark soy sauce, sugar and cooking wine into a large bowl, add half a bowl of water and mix well.

Heat oil in a pan, fry the South American yellow croaker over high heat until golden brown on both sides,

Add ginger and garlic and sauté, pour in the sauce, bring to a boil over high heat, then reduce to low heat and simmer for 10 minutes.

During this time, use a spoon to pour the sauce over the fish to infuse it with flavor, so as not to break the fish by turning it over.

Finally, reduce the juice over high heat and sprinkle with scallions.
