Braised tofu sticks
Overview
Braised tofu sticks are a specialty of Henan, and the tofu sticks are yuba. The yuba was originally the Hejie yuba here and is the most famous. Later, counterfeit and shoddy products appeared frequently, causing it to suffer a lot. We still have good yuba here, and several brands are already well-known. Now when I eat yuba, I always buy it from two brands. The quality is very good. Although roasted tofu sticks is a home-cooked dish with a very rustic name, the recipe and ingredients are very particular. First, you must choose good bean curd sticks. Secondly, you must use high-quality broth to simmer the tofu sticks, and add a little shrimp to enhance the freshness. The side dishes must include black fungus and magnolia slices. Today I used the bamboo shoots soaked yesterday, which are yellow bamboo shoots. Although the color is not very good, it is delicious and the taste is very fresh. In other words, I basically followed the formal material selection plan in terms of ingredients, so the dishes I made tasted good.
