First beat the eggs, add a little water and mix well.

Strain the egg mixture through a fine sieve.

Cut the fresh shrimps that have been headless in half (leaving the tails aside), add 5 fresh shrimps, season as you like, then steam them upright for 3 to 5 minutes to set, take them out and put them into the egg custard.
