Steps
-
Weigh the flour and put it into a cooker or mixer for later use
-
Add 3 grams of yeast to 100% warm water. The water temperature should be below 35 degrees. If you don’t have a thermometer, you can test it with your hands. It just needs to be slightly cooler than the hand temperature! Mix well and let stand for 5 minutes
-
Add 5 grams of sugar, stir until melted, set aside
-
Weigh out 140 grams of water and set aside
-
Pour the yeast liquid into the basin, slowly pour it into the kitchen basin, and start stirring! After stirring evenly, pour in 140g to 160g of water. Be careful not to pour it all at once. Add it slowly. The water absorption of flour is different. I added 150g of water and stirred it twice with the chef's machine at setting 1
-
When the dough is smooth, take it out and continue to knead it evenly. Knead it twice and it’s done!
-
Place on the work surface and cover with plastic wrap, ready to rise
-
The basin was turned upside down on the workbench and started to rise
-
Let the dough rise until it doubles in size and does not spring back when poked. Tear the surface and you can see the honeycomb tissue and smell the aroma of the dough
-
Deflate air, knead well, and set aside
-
Knead into long strips and divide into equal-sized portions for later use
-
Shape each dollop into a round shape! I made 7 steamed buns with 500 grams of flour. One steamed bun is relatively large. You can divide it into 10 to 12 batches, which is also ok
-
Take out the steamer, put warm water in the steamer, cover it with a basket cloth, put the steamed buns on it, cover it and start the second steaming! Let it double in size and then steam it
-
Pour out the water in the pot, replace it with cold water, steam for 20 minutes from the beginning of the fire to the end, turn off the heat and simmer for 5 minutes, then you can take it out of the pot
-
The freshly baked steamed buns are white and plump! Delicious, with dried radish, everyone can eat one
