Sweet rice dumplings
Overview
When the New Year comes, every household will happily cook a big pot of sweet rice dumplings. When relatives come over, they will cut a large piece for them to take home. If you can’t finish it, you can also cut it and fry it, which is still delicious

Prepare glutinous rice flour, brown sugar and two longer wooden sticks (a rolling pin will also work, I forgot to beat the brown sugar)

Use warm water to mix the glutinous rice flour into a dough (the mixture will be softer)

Turn on low heat, pour less than half a bowl of water into the pot, then pour in all the brown sugar and boil it into syrup (don't put too much water, the water will almost cover the bottom of the pot)

When all the sugar melts, pour in the ginger juice and bring to a boil (you can leave it out if you don’t like ginger juice)

Start kneading small pieces of dough, and put them into the syrup piece by piece (the syrup needs to be boiling all the time to have enough space to put the small dough. The small dough can be made into various shapes. Flatten it here to make it easier to cook)

Put all the dough in (to put the dough into the syrup, you can use a spatula to create space for small pieces of dough. Do not press it one by one. After putting it all in, don’t rush to make it smaller. Turn it frequently to avoid sticking to the pan)

After the small dough is completely soft and cooked, it can be eaten. It is sweet and soft

Wait until the dough in the pot is cooked, then use a shovel or wooden stick to cut and press the dough into small pieces

When it's almost done, take the two prepared wooden sticks and put them in, cross each other and stir constantly (the test here is arm strength and perseverance, which is quite hard)

Stir until you can no longer see the white nuggets and it becomes a sticky mass, just like in the picture (of course, the longer you stir, the more delicious it will be)

After stirring, use a stir stick to move the dumpling to another oiled container to let it cool. For convenience, I let the dumpling cool directly in the pot (people in the past were used to moving it to an oiled banana leaf)

After it cools, you can cut it and eat it. However, it is sticky and difficult to cut when it is cooled. It is easier to cut it the next day, and it tastes very chewy
