Overview

Blanch the chicken in boiling water with cooking wine added, remove the blood, take it out and rinse it with super cold water. This will make the chicken firmer.

Tear off the chicken skin with chicken oil and stir-fry the chicken oil separately. The chicken will be more fragrant when cooked with chicken oil!

After the chicken fat is stir-fried, pour in a little vegetable oil and heat it up. Add in the chicken and stir-fry until the chicken changes color and the chicken skin shrinks. This way the meat will be more fragrant and the color will look better.
