Yesterday I was excited to make bread, but the bread machine died heroically halfway through mixing the dough... Don't ask me how I feel, I just want to be quiet... So the units in this recipe are all ml, after all, the bread is made with a measuring cup. Steamed buns are actually a very daily staple food, and they are not difficult to make. It mainly requires effort and time. The handmade noodles are actually chewier, and the addition of milk and sugar makes the steamed buns sweeter. Two of them were eaten as soon as they came out of the pan.

Since I fermented it overnight, the dough was a little over-risen (it smelled sour), so I added half a spoonful of baking soda to neutralize it (baking soda is dissolved in water and added to the dough). If it is not over-risen, you can ignore this step

Shape the dough into a rectangular shape (making a knife-cut steamed bun). If you like round steamed buns, just shape it into a round shape. The dough must be kneaded at this time to be smooth, otherwise the steamed buns will not look good when steamed

Cut into pieces with a knife as shown in the picture, dip the surface in flour to prevent sticking, and let it rest for 15 minutes for 2 fermentations
