【Yantai】Whitebait and Spinach Soup
Overview
Whitebait, commonly called noodle fish by adults, has no scales, no spines, no bones and no intestines; the meat is tender and delicious; and it is a very calcium-rich fish, and nutritionists classify it as a longevity food. It was my first time to cook with fresh whitebait. I simply seasoned it with salt and pepper. It tasted extremely delicious. I didn't like to drink soup. I drank a big bowl.

Fresh whitebait is crystal clear, soft and boneless.

Small garden spinach.

Dice green onions and shred ginger.

Put a little oil in the pot and sauté the onion and ginger.

Add appropriate amount of water.

After the water boils, add the whitebait.

Follow with the spinach.

Add salt and pepper.
