Rice brown sugar toast

Since the introduction of the bread machine, the chef and oven at home have basically been put aside. The most important thing is the convenience of the bread machine. Such a small machine can handle dough mixing, fermentation, and baking, which saves trouble. So I have been struggling with this bread machine endlessly recently. As soon as this bread comes out of the oven, I start to think about how to bake the next bread. How about making a big rice bread today? To be honest, I am really unsure. I have never made bread with rice before. I wonder if the sticky rice will affect the fermentation of the dough? How much rice is appropriate? Should the rice be served hot or cold? In the end, I chose to use leftover rice that had been left overnight. I thought that leftover rice that had been left overnight would generally be firmer and would not become sticky when put in the machine. Moreover, my rice is usually a bit wet. If I use freshly cooked rice directly, it will probably affect the dough effect. Since this was my first time making it, I didn’t dare to add too much rice. After the bread was baked, I thought it would be okay to add 10-20 grams more rice. In addition, I used brown sugar, which is relatively wet, and the rice also contains water, so I used less water in the recipe than usual. The bread did not disappoint me when it came out of the oven. At least it looked pretty good. After it was cooled and sliced, the internal structure felt just right. It didn’t taste delicious. The unique aroma of brown sugar added a lot to the bag. Because of the addition of rice, the texture was moist, soft and delicious. My bread machine is Dongling DL-100.

First pour the liquid (water and egg liquid) into the bread machine, then pour brown sugar into any corner and salt into the other corner.

Then pour in milk powder and flour.

Pour the yeast on top and cover the yeast with flour.

Use chopsticks to stir slightly until there is no dry powder, so as to avoid dry powder splashing when starting the machine.

Then start the machine's 'Kneading' program and knead the dough for 15 minutes. After 15 minutes, stop the machine, add butter softened at room temperature, select the 'Standard Bread' program, select 'Light' for the burnt color, and weigh 900 grams. Start the machine and start kneading the dough. The kneading time for the standard program is 30 minutes.

After kneading the dough for 25 minutes, the machine will beep, indicating that you can add fruit ingredients at this time, and then pour in the rice.

After the machine continues to knead the dough for 5 minutes, the kneading stage ends. Stop the machine and check that the dough has reached the complete stage and the glove film can be easily pulled out.

Arrange the dough slightly, put it back into the bread machine barrel, and start the machine for the next step of primary fermentation.

When the fermentation reaches 1:49-1:48, the machine will have a 1-minute mixing and exhausting stage. After the mixing is completed, stop the machine, take out the dough and press out the big bubbles inside with the palm of your hand, and divide it into 3 equal parts.

Roll the dough into strips of approximately 30 cm.

Pin one end of the 3 noodles together and braid them, but don't braid them too tightly.

Then fold the two ends of the big braid in half to match the length of the bread machine barrel, then turn it over with the folded side facing down.

Put the prepared bread dough into the inner barrel of the bread machine, close the lid and start the machine, and enter the second stage. Because the temperature at home is low, the fermentation during the second stage is not very satisfactory, so I paused the machine twice. My machine has memory and will continue working with the previous steps after the pause.

After fermentation for about 1 hour, the machine enters the baking stage. After baking, brush the melted butter on the surface of the bread while it is hot.
