Soak the vermicelli in cold water until it becomes soft. The vermicelli I used is relatively thin and will soften after soaking in cold water for 5 minutes.

Wash and cut spinach into sections.

Blanch spinach in a pot of boiling water for 10 seconds, drain into cold water and set aside.

Heat oil in a wok, add onion shreds and stir-fry until fragrant.

Add spinach, light soy sauce, and salt and mix well.

Spread the vegetables around the pot, leaving the middle aside, and add the vermicelli.

Use the stir-fried vegetable soup to fry the vermicelli until soft.

Add minced garlic and stir evenly.
