Minced Pork Double Flavor Cowpea
Overview
I heard from a colleague that her husband’s family is from Sichuan and they often stir-fry fresh cowpeas and sour cowpeas together, which is delicious. I happened to buy two kinds of cowpeas and tried them. They tasted really good. Using Jiusan brand non-GMO soybean oil, the cooking is very fragrant.

Prepare the raw materials, soak the sour cowpeas (the sour cowpeas you just bought are very salty) and desalt them;

Cut the two types of cowpeas into 1CM long dices;

Put "Jiusan" brand soybean oil in the wok, add ginger slices and garlic cloves and stir-fry until fragrant;

Add the meat filling and stir-fry until the meat filling is scattered, add cooking wine, light soy sauce, and dried chili and stir-fry until fragrant;

Add the two kinds of diced cowpeas and stir-fry, add sugar to taste, then pour in a small amount of hot water and simmer for 5 minutes until the cowpeas are cooked. (I didn’t add any more salt because the sour cowpeas are a bit salty)
