Braised pork ribs
Overview
After it was done, I ate a few pieces quickly. It tasted really good. When I took a bite, the bones and flesh separated, the meat was full of flavor, and the gravy burst out. The soup of the pork ribs makes the potatoes more fragrant and soft. I finished a plate of braised pork ribs in one go, so satisfying!

Ingredients: 1 potato, 500 grams of pork ribs, 3 star anise, 3 bay leaves, 3 dried chili peppers. (Forgot to take pictures of rock sugar, garlic sprouts and ginger slices)

Blanch the pork ribs in a pot with ginger slices, wash them in cold water and drain them.

Put peanut oil in a pan, add washed star anise, bay leaves, and dried chili peppers, stir-fry over low heat until fragrant, then discard. Then add the pork ribs and fry until golden brown on both sides. (I didn’t fry both sides until golden brown here, for fear that my family would get angry, but frying until golden brown on both sides will make it more fragrant and delicious)

Pour peanut oil into the wok, add 50 grams of rock sugar, and slowly stir-fry over low heat to get the color, like the picture.

Pour 1 spoon of cooking wine, 2 spoons of soy sauce, 1 spoon of dark soy sauce and a little salt into the bowl.

Pour the ribs into the wok where the rock sugar is fried, add the seasonings in picture 5, stir-fry evenly, then add water to roughly cover the surface of the ribs, bring to a boil over high heat, then reduce to low heat and simmer for 45 minutes.

Peel the potatoes, cut into small pieces and set aside.

Pour peanut oil into the pan and fry the potatoes over medium heat for 5 minutes, until the surface of the potatoes is slightly brown and crispy. (In this way, add the ribs and stew them together so that they won’t become mushy)

After the ribs were simmered for 45 minutes, there was still some soup left.

Add the potatoes you just fried and stir-fry evenly, then simmer together for 15 minutes.

Finally, add the chopped garlic sprouts and stir-fry until cooked.
