Slice the chicken breasts, add marinade and mix evenly, marinate for more than 2 hours. (The chicken breast has been marinated, so the meat is firm and not sticky.)

Soak the mushrooms until soft, remove the stems and cut into small pieces.

Thaw the soaked sea cucumbers and rinse them. (Sea cucumbers are soaked in advance and frozen in portions. Take them out and defrost them before eating.)

Soak the yuba until soft and cut into sections.

Wash the scallops (scallops) and soak until soft. (Reserve the soaking water for later use.)

Slice garlic and cut green onions into sections.

Heat the pan and add shrimp oil. (Shrimp oil is made from shrimp heads and shells, see my recipe ‘‘Shrimp Oil’’)

Add garlic slices and sauté until fragrant. (There is no ginger at home, so I didn’t put it away.)

Add chicken breast and fry until it changes color.

Add the mushrooms and stir-fry.

Add sea cucumber and fry.

Add the Yao Zhu and the water for soaking the Yao Zhu.

Put oyster sauce and appropriate amount of water to boil, then reduce to low heat and simmer for 30-40 minutes.

Add yuba and cook until soft.

Add green onions.

Stir well.

Fresh and delicious, yuba is delicious no matter how you prepare it.
