Overview

Wash the glutinous rice twice and put it into the electric pressure cooker, add 500ml hot water (the water consumption is less than usual for steaming rice, heating water can save electricity), and start the rice program.

Take a clean basin and sterilize it with hot water. Put the steamed rice into a basin.

Take 500ml cold boiled water and stir the rice into pieces.

Let the rice dry to around 35°C (it feels warm to the touch). Use 150ml of warm water to dissolve the koji (I use Angel brand). Mix it with the rice and put it into the hot water sterilized rice wine machine inner pot (2L). Make a small nest in the middle to observe the wine.
