Cranberry Cookies

Cookies made for my mother, wishing her good health! Happy holidays! Happy Mother’s Day to all the sisters in Meitian! Always as beautiful as a flower! The cranberry cookies made with this recipe are particularly crispy, sour and sweet.

Cut the butter into small pieces and soften at room temperature, then add the powdered sugar.

Mix well with a spatula.

Beat the butter with a whisk at low speed until the butter becomes lighter in color and thicker in volume.

Add the egg liquid in 3-4 times, beating until the butter and liquid are completely combined each time before adding the next time.

Sift in the flour and mix evenly with a rubber spatula.

Add the chopped dried cranberries and stir evenly.

Arrange into a rectangular shape, wrap in plastic wrap and place in the refrigerator for about 30 minutes.

Take out and cut into slices of equal thickness and place them on the baking sheet, leaving some space in the middle because the biscuits will expand during baking.

Place in the middle rack of the preheated oven and select the biscuit/tart function (the upper and lower tubes are heated at the same time, and the temperature is adjusted to 175 degrees for 25 minutes).

After being cooked, let it cool before eating. If you can't finish it, you can put it in a sealed jar or bag to prevent moisture from affecting the taste.
