Green vegetable and shrimp skin egg pancake
Overview
I went back to my hometown and picked some cabbage from my dad's garden. Because my dad didn't spray any pesticides, the leaves were eaten by bugs and became almost like a fish net. Fortunately, the vegetable stems were still intact. After I came back, I washed it, blanched the whole vegetable leaves with water, added some dried shrimps I bought some time ago, and made this egg pancake to eat. Not to mention it tasted really good!

First wash the Chinese cabbage, blanch it in a pot of boiling water and then let it cool;

Chop the blanched cabbage and mince the green onions

Wash the shrimp skin slightly with water and dry it

Put the chopped cabbage into a basin, add eggs, flour, shrimp skin, minced green onions, water and salt and mix well to make a vegetable batter

After heating, add peanut oil. When the oil is hot, use a spoon to scoop a spoonful of vegetable batter into the pot

After frying until hard chrome residue forms on one side, you can flip it over and fry the other side; you can cover the pot and simmer for a while;
