【Hunan】Zongtang Zuo’s Chicken
Overview
General Tso's Chicken, also known as Zuo Cock. Created by Peng Changgui and named after Zuo Zongtang, it actually has no direct relationship with Zuo Zongtang, a general in the late Qing Dynasty. "General Tso's Chicken" originated from the visit of Commander Redford of the US Seventh Fleet to Taiwan in 1950. He was in charge of the cooking. He used pickled boneless chicken legs and deep-fried them until they were "crispy on the outside and soft on the inside". Stir-fry evenly with soy sauce, vinegar, chili and other seasonings, then thicken the soup and drizzle with sesame oil to make this dish. It tastes crispy on the outside and tender on the inside. It has the spicy taste of Hunan cuisine and is named after the famous Hunan general Zuo Zongtang.

Chop ginger and garlic into mince, mince green onion, and cut dry chili into sections
