Two-color biscuit roll
Overview
When it was baked, the aroma filled the room, and it was really amazing when it came out of the oven. My unknowing grandpa ate a piece when it was hot and thought it was a cake. When it was cold, he ate it and realized it was a biscuit. It was crispy, sweet and a little salty, which made people want it.

Cut the butter into small pieces and soften it (it is better if it can be poked into your fingers), beat the eggs and set aside, put the low-gluten flour and almond flour into a sieve and set aside

Add the softened butter to the fine sugar, mix it manually with a whisk first, then use an electric whisk to beat it until it becomes fine and becomes larger in volume and lighter in color

Add the egg liquid in portions, beating each time until the eggs and butter are mixed before adding again

Sift the powder into the sieve, and if it cannot pass through the sieve, press it with a spoon and then sift it again. If the almond flour is a little coarse and cannot pass through the sieve, add it directly. This will not have much effect, but the taste will not be as delicate

Use a spatula to mix well, turn it up from the bottom and then press down. It will be powdery at first, and it will become a dough after mixing more

After mixing, knead it into a smooth dough with your hands. Divide the dough into two equal parts. Add cocoa powder to one part and knead it into cocoa dough

After kneading, roll the two doughs into two rectangles of similar size

Brush a layer of egg wash on the white dough

Then put the cocoa dough on top of the white dough and roll it up. When rolling, the force should be even, and the roll should be tight but not deformed

After rolling, wrap it in plastic wrap and refrigerate until the dough roll becomes hard (can be left overnight)

Take out the hardened dough roll and cut it into 0.5cm thick slices with a knife. Trim the lower edge slightly with your hands (before cutting, turn on the oven and preheat it to 170 degrees and lower to 150 degrees)

Bake in the middle rack of the preheated oven for 20 minutes. Take it out and it will not be crispy. It will become crispy after cooling
