Cut the chicken feet in half, clean them, put them in a pot with cold water, add some cooking wine, ginger scraps, a spoonful of salt, and blanch them.

Calculate the time according to the water boiling, and blanch for 5 minutes.

Take it out, rinse the foam with clean water, and cool down the chicken feet.

Pour the rinsed chicken feet into a large basin, add an ice cube, pour cold water over the chicken feet, and cool in the ice water for 5 minutes.

The chicken feet soaked in ice water, the skin is crispy and elastic, take it out and drain the water.

Prepare the auxiliary ingredients. My small green oranges are already mature golden oranges. If you don’t have small green oranges, you can use half a lemon instead. If you like it spicier, you can add a few more millet millets.

Dice green pepper, spicy millet, garlic, shred ginger, and slice small sour oranges.

Heat oil in a pan over medium heat, add shredded ginger, green pepper, spicy millet and half of the garlic and stir-fry for a minute.

After stir-frying, add a tablespoon of sugar, balsamic vinegar, light soy sauce, dark soy sauce, and salt, and stir-fry until the sugar melts, about a minute.

Turn off the heat and let cool for about 5 minutes.

Add a spoonful of spicy red oil and a small spoonful of sesame oil.

Pour in the garlic cubes that were left just now. Add the garlic cubes in two batches to make the garlic aroma more fragrant when marinating later.

Finally add pepper and sour orange slices (or lemon slices).

Stir thoroughly to coat the chicken feet with the sauce.

Take a large bowl with a lid, pour the chicken feet, and all marinated ingredients into the large bowl together.

Cover and refrigerate, preferably overnight. During this time, turn the chicken feet over and stir them up and down to make the marinade more flavorful.
