Blanch the donkey meat and put it in a pressure cooker for 20 minutes. Cool and cut into pieces.

Soak sweet potato vermicelli in boiling water.

Drain the water from the vermicelli.

Heat oil in a pan, add garlic, ginger and dried chili pepper, stir-fry until fragrant.

Add donkey meat and fry for two minutes.

Add salt, cooking wine, light soy sauce and dark soy sauce, and stir-fry for another two minutes.

Add boiling water and bring to a boil.

Transfer to pot. After boiling, reduce heat and simmer for twenty minutes.

Add fans again. Continue simmering for five minutes. Stir halfway through.

Finally sprinkle with chopped green onion.
