Enoki mushrooms topped with taro and yam
Overview
Recently I borrowed a completely vegetarian book. Although I am not a vegetarian, it is always good to eat more vegetables. This dish contains both staple food and side dishes, so you don’t have to worry about eating it whether you want to lose weight or not. Originally this dish was made with taro and enoki mushrooms. I didn’t have much taro, so I added some yam to make it more nutritious.

Peel and wash the yam and taro and cut into pieces.

Place in rice cooker and steam until cooked. (You can make an appointment for steaming to save time)

Cut the washed enoki mushrooms, dice the red pepper and mince the ginger.

Preheat the pot, pour a little oil, add minced ginger and stir-fry until fragrant. (The glass pot must be one that can be heated by an open flame)

Add enoki mushrooms and red pepper and stir-fry.

After the enoki mushrooms are fried until soft, add half a bowl of water, an appropriate amount of light soy sauce, salt and pepper and stir well.

Put appropriate amount of yam and taro into the plate.

Top with fried enoki mushrooms.
