Dragon and Phoenix Silk
Overview
I learned it by watching videos, but the conditions at home are limited and it’s a bit rough. It is said to be a Beijing dish. The original version uses black fish, and I use green snails. Dragon and Phoenix Silk: Fried shredded fish and shredded chicken... very interesting.

Remove the bones and skin from the fish belly and cut into thin strips, about the thickness of two matchsticks. Season with salt and a little beer, egg white, water and starch.

Stir-fry the shredded bamboo shoots, shredded mushrooms and shredded ginger, then add the fried shredded fish and chicken, stir-fry briefly, season and serve.
