Luffa and roasted edamame

Overview

The loofah is sweet, soft and tender, the edamame is sweet, and the soup is silky. It’s so delicious when paired with rice!

Steps

  1. Peel the loofah, wash and cut into hob cubes. Set aside.

  2. Wash the edamame and set aside.

  3. Add an appropriate amount of water to the pot and bring to a boil. Add the edamame and a little salt and cook for five minutes until the beans are cooked. Remove and drain the water and set aside.

  4. Cut the ginger into shreds and set aside.

  5. Add shredded ginger and stir-fry.

  6. Add the loofah and stir-fry for a while, then add an appropriate amount of warm water and bring to a boil.

  7. Add edamame, add appropriate amount of salt and bring to a boil.

  8. Prepare a small bowl and add starch to thicken it.

  9. When the soup becomes thicker, thicken the prepared juice and sprinkle in a little chicken essence.

  10. Finished product.
