Chop the peppers, king oyster mushrooms and minced garlic. Boil water in a pot, pour in the washed scallop meat, add some cooking wine and blanch for half a minute, remove and drain.

Heat 50% oil in a pot, add king oyster mushrooms and fry until slightly brown, remove and drain.

Add the scallop meat, fry the green pepper for 10 seconds and remove.

Leave the oil in the pot and sauté the minced garlic and dried chili pepper until fragrant, add the scallop meat, and the vegetable chili pepper and stir-fry evenly over high heat.

Then add king oyster mushrooms and stir-fry, add salt soy sauce, oil, sugar and dark soy sauce and stir-fry evenly.
